The Ai masters have preserved the teachings of their predecessors and have continued making high-quality sukumo Ai in harsh environments that include reaping Ai plants in midsummer and working in facilities where the fermentation temperature exceeds 60 degrees Celsius. The traditional sukumo Ai production methods preserved by the Ai masters have been inherited by later generations who continue to create beautiful Ai colors.
